Cheerios® Coated Grilled Cheese Sandwiches

Notes:Make this sandwich with just cheese, make the optional ham and mustard variation, or make it your own.

Special equipment: Toaster, 12-inch nonstick skillet

Ingredients

serves Serves 4, active time 20 minutes, total time 20 minutes
  • 8 slices wheat (or white) bread
  • 10 ounces cheddar, divided (4 ounces grated, 6 ounces sliced)
  • Whole grain mustard, optional
  • 8 slices ham, optional
  • 4 tablespoons (2 ounces) unsalted butter
  • 1 cup Cheerios Cereal, divided

Procedures

  1. Working 2 slices of bread at a time, lightly toast in toaster. While toast is still hot, immediately sprinkle ¼ of the grated cheddar evenly over the toast. As cheese begins to melt, evenly sprinkle ¼ cup of Cheerios® cereal over cheese, pressing firmly to adhere. Repeat with remaining slices of bread.
  2. Assemble sandwiches with mustard and ham (if using), and sliced cheddar. Heat 2 tablespoons butter in 12-inch nonstick skillet over medium heat until foaming subsides. Add sandwiches to skillet and reduce heat to medium low. Press sandwiches gently with spatula and cook until bottom side is deep golden brown and crispy, about 5 minutes. Adjust heat as necessary to keep sandwiches from burning.
  3. Transfer sandwiches to large plate and melt remaining butter in skillet. Cook second side of sandwich to deep golden brown and crispy, pressing gently with spatula, about 5 minutes more. Serve immediately.

Grilled Bread and Kale Salad With Red Onions, Walnuts, and Figs

This standout salad takes a turn from the ordinary by wilting the kale over heat before serving.

Suggested tweaks: You could fiddle with the fruit if figs aren't in season, using apples, pears, or even grapes instead.

Ingredients

serves Serves 2 to 4, active time 35 minutes, total time 35 minutes
  • 5–6 ripe figs
  • 1–2 tablespoons fresh lemon or lime juice
  • 1 3-ounce piece Parmesan cheese
  • 1 loaf ciabatta or sourdough baguette (fresh or day-old)
  • 1 large or 2 small bunches (1/2 pound total) lacinato kale
  • 3 tablespoons extra-virgin olive oil
  • 1 small red onion, cut in half and then into 1/4-inch slices
  • 1/4 teaspoon salt
  • 2 tablespoons balsamic vinegar
  • A handful or two walnut halves, toasted and coarsely chopped
  • Black pepper
  • Lemon or lime wedges

Procedures

  1. Stem the figs and slice them lengthwise into about 5 wedges per fig. Place them in a medium dish and sprinkle with the lemon or lime juice. Toss gently to coat and set aside.
  2. Shave strips of Parmesan from the block of cheese, using a sturdy vegetable peeler. Lovely cheese ribbons will ensue. Set aside.
  3. Slice the bread into approximately a dozen thin (as in almost see-through) slices. Larger slices from a ciabatta can be halved for easier handling and consumption. Set aside.
  4. Hold each kale leaf by the stem and use a very sharp knife to release the leaf from the stem (it’s OK to leave the narrow part of the stem that blends into the leaf farther up). Make a pile of the leaves, roll them up tightly, and cut crosswise into super-thin strips. Transfer to a large bowl of cold water and swish around to clean. Spin very dry and transfer to a large bowl. Set aside.
  5. Heat a large deep skillet over medium heat for about a minute. Add 2 tablespoons of the olive oil and swirl to coat the pan. Turn up the heat to medium-high and add the onion and 1/8 teaspoon of the salt. Cook, stirring and/or shaking the pan a little, for 2 to 3 minutes, or until the onion becomes shiny and is still this side of tender.
  6. Transfer the hot onion to the kale in the bowl and stir everything around a bit, then return the entire bowlful of kale-plus-onions to the pan. Stir-fry quickly—just for a minute or so—over medium-high heat until the kale turns an even deeper shade of green and wilts slightly.
  7. Return it all to the bowl, tossing in the remaining 1/8 teaspoon salt. You can add some of the cheese at this point, if you’d like it to melt in slightly.
  8. Remove the pan from the heat, wait a minute or two, then add the vinegar to the pan (stand back—it will sizzle), swirl it around, and pour what’s left of it into the kale. (It will mostly evaporate.)
  9. Without bothering to clean the pan, return it to the stove over medium heat. Wait another minute, then add the remaining 1 tablespoon olive oil and swirl to coat the pan. Add the bread slices in a single layer and grill on each side until lightly golden and perfectly crisp.
  10. Transfer the toasts to the kale, along with the figs and all their juice and the shaved cheese to taste. Toss quickly (no need to get things uniform), adding the remaining cheese and the walnuts as you go. Serve right away, passing a pepper mill and offering wedges of lemon or lime to be aimed straight at the figs.
  11. Optional enhancements:
    Not a fig person? You can swap in a crisp fall apple, sliced thin and lemon juice-doused.
    Go in an entirely different direction and substitute slices or chunks of a very sweet ripe heirloom tomato or a few handfuls of very sweet, ripe cherry tomatoes.

Za'atar-Rubbed Cod With Spicy Chickpea Puree and Grilled Zucchini


Special equipment

Ingredients

serves Serves 4, active time 30 minutes, total time 45 minutes
  • For the Chickpea Purée:
  • 1 (14.5 ounce) can chickpeas, rinsed and drained, liquid reserved
  • 1 habanero chili, stemmed and seeded
  • 4 medium cloves garlic
  • 1/4 cup tahini
  • 1/2 cup fresh-squeezed lemon juice from about 4 lemons, divided
  • 5 1/2 tablespoons olive oil, divided
  • Kosher salt
  •  
  • For the Zucchini:
  • 4 medium zucchini, ends removed and sliced lengthwise into 1/4-inch slices
  •  
  • For the Fish:
  • 4 skinless cod fillets, 6 to 8 ounces each.
  • 2 tablespoons za’atar seasoning
  • Freshly ground black pepper.
  • 1/4 cup roughly chopped flat-leaf parsley

Procedures

  1. Place chickpeas, habanero, garlic, tahini and 1/4 cup lemon juice in a food processor or blender. Pulse to combine to a chunky puree. With the motor running, add 2 tablespoons olive oil in a slow, steady stream and process until smooth. If mixture is too thick, add some of the reserved canning liquid to achieve a thinner-but-sturdy, sauce-like consistency. Refrigerate until ready to use.
  2. Light one chimney full of charcoal. When all the charcoal is lit and covered with gray ash, pour out and spread the coals evenly over half of coal grate. Alternatively, set half the burners of a gas grill to high heat. Set cooking grate in place, cover gill and allow to preheat for 5 minutes. Clean and oil the grilling grate.
  3. Place zucchini in a large bowl and drizzle with 1 tablespoon olive oil and remaining 1/4 cup lemon juice. Season with salt and pepper and toss to combine.
  4. Place zucchini over hot side of grill, perpendicular to grill grates. Cook until well charred, about 2 minutes, then flip and cook until second side is charred, 1 to 2 minutes longer. Set aside on a large plate.
  5. Heat 1 tablespoon olive oil in a 12-inch skillet over medium-high heat. Drizzle cod fillets with remaining 1 1/2 tablespoons olive oil. Season with salt and pepper and rub with za’atar seasoning. When oil is shimmering, add fish fillets and cook without moving until well browned on first side, about 3 minutes. Carefully flip with a flexible metal spatula and cook on second side until just cooked through, about 2 minutes longer.
  6. Place a generous dollop of chickpea puree on each of four individual plates. Set fish on top, alongside grilled zucchini. Garnish with parsley and serve immediately.

Grilled Merguez Sandwiches with Caramelized Onions, Manchego, and Harissa Mayonnaise

Ingredients

serves Serves 4, active time 25 minutes, total time 25 minutes
  • 1/3 cup mayonnaise
  • 1 tablespoon harissa
  • 8 links merguez
  • 1 French baguette
  • 1/3 cup extra-virgin olive oil
  • 1/2 cup caramelized onions
  • 1/3 pound manchego cheese, grated
  • 1 bunch fresh cilantro
  •  
  • Type of fire: two-zone indirect
  • Grill heat: medium-high

Procedures

  1. Mix mayonnaise and harissa together in a small bowl. Set aside.
  2. Light one chimney full of charcoal. When all the charcoal is lit and covered with gray ash, pour out and arrange coals on one side of the charcoal grate. Set cooking grate in place, cover grill and allow to preheat for 5 minutes. Clean and oil the grilling grate. Grill merguez over hot side of grill until browned all over and cooked through, 4 to 6 minutes total. Transfer to plate.
  3. Slice baguette into four 6-inch portions and halve each portion lengthwise. Brush cut side of each baguette with oil. Grill baguette over hot side of grill, cut side down, until lightly browned, about 1 minute. Remove to plate.
  4. Top bottom half of baguette with 2 merguez links, about 2 tablespoons of caramelized onions, manchego cheese, and a few sprigs of cilantro. Spread harissa mayo on top half of baguettes and place on top of each sandwich.
  5. Place sandwiches on cool side of grill, cover, and cook until cheese has melted, about 5 minutes. Transfer to a plate or tray and serve immediately.

Italian-Style Grilled Octopus


Ingredients

serves Serves 4, active time 1 hour 40 minutes, total time 1 hour 40 minutes
  • 3 pounds cleaned octopus
  • 1 cup dry white wine
  • 1/4 cup whole peppercorns
  • 2 lemons, plus additional lemon wedges for serving
  • 1 wine cork
  • 2 cloves garlic, peeled
  • 1/2 cup extra virgin olive oil divided

Procedures

  1. In a large pot, place the octopus along with the wine, peppercorns, 1 lemon cut in half, cork, and garlic. Cover with water by 1 inch and bring to a boil over medium high heat. Reduce the heat to a simmer, and cook the octopus until it is tender when pierced with a sharp knife. (Anywhere from 45 to 90 minutes.) Drain, and allow the octopus to come to room temperature.
  2. Light one chimney full of charcoal. When all the charcoal is lit and covered with gray ash, spread evenly over coal grate. Alternatively, set the burners of a gas grill to high heat. Set cooking grate in place, cover gill and allow to preheat for 5 minutes. Clean and oil the grilling grate. Toss the octopus with 1/4 cup of the olive oil and season with salt and pepper.Place the octopus on the grill and cook for a few minutes on both sides until the octopus is well browned, but still remains moist, 3 to 4 minutes per side.
  3. Cut the octopus tentacles, place on a platter and drizzle with the remaining olive oil, juice of the remaining lemon, and season with salt and pepper. Serve immediately or at room temperature with lemon wedges if desired.
